Alta's Potato Soup

Ingredients
6 c. water
4 c. diced potatoes
1 large onion, thinly sliced
1 T salt
1 c. chopped celery (with leaves)
1 c. diced carrots
1 c. raw cashews, rinsed
1 c. water
1 teas. garlic powder
2 T cornstarch
2 T chicken style seasoning
2 T parsley flakes
2 teas. chopped chives when serving (optional)
Instructions
- Cook potatoes, onions, celery and carrots in 6 cups of salted water until done.
- Blend cashews in 1 cup of water until smooth. Add garlic powder, chicken style seasoning and cornstarch to cashew mixture and blend well.
- Stir into soup and continue stirring as it thickens. Add dried parsley after soup has thickened. Add chives if desired.
